Lunch is always a quick-fix for me. I’m usually keeping busy during the day, so I don’t have much prep time, nor do I want to spend time cooking. I’ll spend maybe one day cooking then just pair up a protein with some carbs (veggies, fruit and/or starch). A brand new Aldi just opened near us and I finally got a chance to shop there over the weekend. That place is amazing! I found a few different kinds of pasta with seasoning packets included, made by Specially Selected. Once bag of pasta makes enough servings for a week and then some. It’s been so hot lately that a cool pasta salad is quite appetizing. If you’re super lazy like me, grab a protein (chicken, fish, turkey, etc) from the salad bar at Whole Foods.
Ingredients:
3 oz cooked chicken breast
1 cup cooked pasta *I used Capunti Pasta with Puttanesca Tomato, Olive, and Caper Seasonings from Aldi
Optional: Veggies, Dressing, etc.
